Danico, a Parisian bar, has unveiled the fifth edition of its Xplorer menu, inspired by Peruvian culture and heritage. This series, initiated in 2023, features a new menu biannually, highlighting diverse regions worldwide, with Japan being the subject of an earlier edition.
Owner Nico de Soto, who first visited Peru in 2007, drew inspiration from the country’s rich landscapes and cultural heritage. He skillfully incorporated a narrative that reflects Peru’s indigenous traditions, colonial history, and modern flavors, highlighting local ingredients in the cocktails.
In collaboration with bar manager Coco Gaudin, de Soto crafted twelve original cocktails for this menu. Notable creations include the Titicaca, which combines Rémy Martin VSOP Cognac with pumpkin seeds and other unique ingredients.
Another standout, Chicha Morada, adapts a traditional Peruvian beverage by adding Grey Goose Vodka and rectified apple juice to the iconic purple corn drink. Leche de Tigre features Citadelle Gin and ceviche distillate, while Tupánanchiskama, meaning ‘see you soon’ in Quechua, is made with tonka-infused Bacardí 8 rum and various flavorful elements.
Earlier this month, de Soto also launched his pandan liqueur, Kota, in the United States, signifying continued innovation in his offerings.
